Sesame-Crusted Fish with Tahini & Miso Cabbage Salad
The dressing is the thing that brings this whole plate together. Creamy, earthy, and tangy. The miso adds sweetness and works well with the savoury, crisp cabbage. A spin on the regular fish and coleslaw.
Ingredients
Tahini & Miso Dressing
- 3 tablespoons tahini
- 2 tablespoons white miso
- 2 tablespoons white wine vinegar
- Juice of 1 lemon
- 4 tablespoons water, plus more if needed
- Salt, to taste
- 2 tablespoons olive oil (optional)
Cabbage Salad
- ¼–½ cabbage
- 6 spring onions
Sesame-Crusted Fish
- 800 g flathead or another white fish that cooks quickly
- 200 g plain flour, for dusting
- 2 eggs
- 3 tablespoons milk
- 400 g panko breadcrumbs
- 4 tablespoons sesame seeds
- Oil, for shallow frying
- Salt
To Serve
- 1 lemon, cut into wedges
- Mayonnaise (optional)
Method
- Make the dressing.
Add the tahini, white miso, white wine vinegar, and lemon juice to a bowl. Whisk together. It will seize and thicken very quickly. Gradually add the water until you have a smooth, creamy dressing with the consistency of a loose ranch dressing. You may need a little more water to get it there. Season with salt and set aside. If you are hitting the road and using the dressing later, add the olive oil to help keep it nice and smooth.
- Prepare the salad.
Remove any tough outer leaves from the cabbage and slice it very finely. Thinly slice the spring onions, including some of the green tops. Toss the cabbage and spring onions together in a large bowl.
- Dress the cabbage.
Pour most of the tahini and miso dressing over the cabbage and spring onions, and toss. The salad should be generously coated but still feel fresh and crunchy. Add a little more dressing if needed and set aside while you cook the fish.
- Prepare the crumb.
Whisk the eggs and milk together in a bowl. In another bowl, combine the panko breadcrumbs and sesame seeds.
- Crumb the fish.
Dust each piece of fish in flour, shaking off any excess. Dip into the egg mixture, then press firmly into the sesame panko, making sure the fish is evenly coated all over.
- Shallow-fry the fish.
Heat a generous layer of oil in a large frying pan over medium-high heat. Once hot, carefully add the fish. Cook in batches if needed so you don’t overcrowd the pan. Fry for a few minutes on each side until the crumb is deeply golden and crisp and the fish is just cooked through. Drain briefly on paper towel and season with salt while hot.
- Serve.
Spoon the dressed cabbage and spring onion salad onto plates and place the crispy fish alongside. Finish with a wedge of lemon for squeezing over the fish. If you like, add a small spoonful of mayonnaise on the side.
